Faith’s Fruit Salad
Fruit, chopped into bite sized pieces (I like bananas, oranges, honeydew, strawberries, blueberries, mango, and pineapple)
Agave/succanat/brown sugar/honey (basically whatever sweetener you like, but it should have a strongish flavour)
Dump the fruit into a large bowl and toss with the lime juice (to keep it from browning). In a smaller bowl, mix together the sour cream, some more lime juice, the sweetener, and curry powder until it tastes good to you. Then toss the fruit with the dressing. Chill for a little while and serve cold. If you’ve used bananas as one of the fruits, take the bananas out before you chill the leftovers, because they’ll get yucky and mushy.
Faith’s Black Bean Salsa/Salad
1 can black beans, drained & rinsed
The kernels from 2 or 3 ears of corn
A little chopped cilantro, if you like it
Some chopped tomato
Some crumbled feta cheese
Some lime juice
Mix everything well and serve cold. It’s a great salsa, but it’s also a great salad. So eat it however the heck you want to eat it.
