For some reason I have trouble sleeping on Saturday nights. I thought that perhaps with Joe home sleep might come, but alas, it was not to be. So I spent the evening reading all the books I checked out from the library during the day. Now I’m very, very sleepy.
I’d love to show you the photo I took about 6 a.m. today. Joe was lying across the bed where he’d fallen fast asleep pretty early for him, and Scout was lying next to him, head on his shoulder and snuggled under the cover. But Scout asked me not to post this one, since it’s a private Papa and him moment, so I’ll refrain.
Joe kindly touched up my purple stripes yesterday. Actually, they’re more blue now than purple, but anything’s better than the ghastly greyish white that I was stuck with after falling asleep in the bathtub last week.
I made my first batch of vegan cupcakes yesterday as well (I guess it was a fairly busy day, even though it didn’t seem so at the time). They were seriously good. I didn’t make any frosting for this batch, since I know quite well how to make vegan frosting. But Joe seems to think they’re not quite the thing without frosting, so I may make another batch tomorrow. I’ve got a whole cookbook to experiment with, and only two months before Jehara’s wedding.
And I also attempted to duplicate Chili’s southwestern style vegetarian soup. I don’t know that I came all that close, but it did come out quite nicely. Easy, too–a can of diced tomatoes with green chiles, a can of pinto beans, a can of corn, all undrained and poured into a pot. I added a little water and some vegan broth, onions, peppers, cilantro, chives, and cumin, and let it simmer until we couldn’t wait any longer. I pureed part of it in the blender to thicken it up a bit. That didn’t work too well, so I used a little corn starch. Masa would have been better, but I didn’t have any. We ate a few bowls that way, with some crumbled tortilla chips to add a little crunch. Later on I put in some fake chicken strips, and that was all right, but it was really better without it.
Joe and I also spent a good hour or two watching Beatles songs and video on YouTube, with the result that I’ve had Maxwell’s Silver Hammer running incessantly through my head for the last 15 hours.
And with that, I’ll leave you to return to your regularly scheduled lives.
