Friday at last!

It was a crazy, crazy week. At work I got moved to a different team, something I’ve never had to do before, and move to a different desk. It’s just unreal how much junk I accumulated at my desk since we moved into the new office in mid-November. Sheesh. So I took it home. The junk, not the desk.  I’m really going to miss the group I used to work with. I’ve been there since leaving CPS in 2005, and they’re a great bunch of people. I know it’s not like I moved cross-country or anything, but not working with them every day still makes me sad.

Our entire building did a really fantastic service project, and a group of us got to deliver the results to the recipients. Afterward we went to Abuelo’s for lunch. I was pleased to see that they had avocado enchiladas and spinach enchiladas, but not so pleased to see that all their beans had bacon. Not to worry; they had steamed broccoli with butter on their menu. I explained to the server that I am a vegan, and don’t eat any meat, dairy, or eggs. I ordered the two different veggie enchiladas and broccoli. Cool. She even caught it when I slipped and asked for a cheese enchilada. So I felt pretty confident. Then she brought our plates out, and my enchiladas were swimming in cream sauce and covered with cheese. She cheerfully took them back and brought me another plate of enchiladas. The avocado enchilada was really fantastic, and the ranchero sauce complimented it nicely.  Then, noticing that the spinach casserole on C’s plate had cheese and cream sauce, I decided to poke my spinach enchilada open before I ate it. Good thing. It wasn’t filled with sauteed or steamed spinach, but with the spinach casserole. Yeah. And there was a little butter on the broccoli, but I was hungry and ate it anyway.

That makes twice this week I’ve wanted beans and have been thwarted, and Taco Bell was starting to sound good. But Joe gave me a weekend away, and the hotel is close to a Whole Foods Market. I stopped there on my way to the hotel, and Amy’s came to my rescue with a really delicious frozen vegan bean & rice burrito.

So today this vegan ate:

  • 1 banana
  • 1 bowl of fresh fruit (pineapple, honeydew, canteloupe, and red grapes)
  • a couple of tortilla chips and salsa at the restaurant
  • 1 avocado enchilada
  • steamed broccoli
  • a fantastic ambrosia apple
  • Amy’s burrito with organic beans and rice (vegan)
  • about 10 guiltless gourmet tortilla chips
  • and lots of water

Soupy Goodness

Black Bean Soup for dinner last night. Joe loved it.

  • a little bit of olive oil in a nonstick skillet
  • 3 chopped scallions, green included
  • 4 small cloves of garlic, sliced
  • a little green bell pepper, coarsely chopped
  • 2 cans black beans, rinsed and drained
  • 2 veggie bouillon cubes (more if needed)
  • water
  • salt, pepper, crushed red pepper, and cumin

Saute the veggies in the olive oil until they are slightly soft.  Add water, beans, bouillon cubes, and season to taste. Bring to a boil, then cover and simmer for a while.  Blend it with your immersion blender OR remove about a cup and a half and puree, reurning the pureed mixture back to the pot to thicken the soup.

The only thing I’d have done differently would be to add a seeded, chopped jalapeno pepper for a little kick.

Yesterday this vegan ate:

  • 2 bananas
  • cantaloupe
  • flatbread and hummus
  • black bean soup with flatbread

A little light on the veggies, so I’ll make sure to have more veggies today.
